Black Bean Oat Burgers

A couple of weeks ago, I was having a hankering for some veggie patties and decided to make use of the arsenal of black beans in the pantry. I consulted a bunch of recipes online and then finally catered it to ingredients on hand (along with flavor preferences and common sense). The amount of breadcrumbs and oats depended on texture. (Too wet? Add oats. Too dry? The soft bread crumbs help it smoosh together.)

Ingredients Used:
Chopped Mushrooms
Minced Onions
Minced Garlic
Steel-Cut Oats
Fresh Bread Crumbs
Black Beans
Crumbled Cotija Cheese
Cilantro
Sea Salt
Freshly Cracked Black Pepper

I basically just sauteed the mushrooms with the onions and garlic, then mushed it all up with the rest of the ingredients. I formed patties and cooked them over medium heat in coconut oil. They didn’t hold together wonderfully, but they were tasty enough that I didn’t care!

The texture was fun and chewy, mostly thanks to the cooked cotija. I loved having these for leftovers the next few days. I ate them alone, on a salad, on a sandwich, and crumbled cooked with breakfast potatoes. Easy to make, no meat, and versatile for leftovers. Works for me. 🙂
